Introduction

This is just the sauce and the chicken but it can be tossed with rice and veggies for a nice stir fry. This calculation has chicken thigh in it because that's what I had on hand but switched the chicken breast would be a lighter choice. Ingredients

    2 1/2 pounds boneless, skinless chicken
    1 c. honey
    3/4 c. soy sauce
    2 T. crushed garlic
    3 tsp ground ginger

Directions

Warm marinade ingredients in the microwave until the honey is melted. Pour over chicken and either bake covered for 30-40 minutes at 350 or saute in a skillet for 20 minutes until thoroughly cooked. Use extra sauce to toss in some broccoli and rice.

You can pre-make this, without cooking it and freeze it in different portion sizes. I freeze this in two serving sizes and run it under hot water to thaw it.
