Introduction
Quick, easy and delicious!!!I love these and so does my 7 year old daughter! The calorie count does not include the lettuce, it's ony for the filling because some people may want to use more lettuce and less filling (like me) and others may want more filling and less lettuce. Plus there are several types of lettuce, I like to use Bibb or Boston lettuce. I like to squeeze lime juice over each wrap but this is optional and not included in the calorie count. This makes a great pairing with brown rice or you can omit the lettuce and put the filling directly on top of the rice, either way it's a great meal! Quick, easy and delicious!!!

Ingredients

1/2 pkg of Jennie-O Extra Lean Ground Turkey (10oz)
1 can (8oz) crushed pineapple in juice, liquid drained and reserved
1/4 cup teriyaki sauce
1 tbl cornstarch
2 green onions, sliced (2tbl)
1/4 cup diced red bell pepper
1 can (8oz) sliced waterchestnuts, chopped
6 Shitake mushrooms, stems removed, chopped
Directions
1. In 10-inch skillet, cook turkey over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain and return to heat. (Optional-stir in salt and pepper to taste, this is not included in the calorie count as I don't use it)
2. Add red bell pepper, pineapple, waterchestnuts, and mushrooms. Cook 1-2 minutes stirring occasionally.
3. In small bowl, mix reserved pineapple juice, teriyaki sauce, and cornstarch. Stir mixture into turkey. Cook and stir until thick and bubbly, stirring frequently. Spoon mixture onto lettuce leafs or over top brown rice (lettuce and rice are not included in the calorie count).
Makes 3 1-cup servings. This recipe can easily be doubled to feed a larger family.
