Introduction
Everyone who has tried this casserole absolutely loves it. It's often a birthday or celebration meal request. Plus, it is so easy to make it's ridiculous. Ingredients
-
3 frozen boneless, skinless chicken breasts
1 can cream of mushroom soup
1 can cream of chicken soup
1 bag Doritos (Nacho Cheesier)
1 can Rotel (original)
1 bag shredded Monterey Cheese (Fiesta Cheese is also wonderful)
Directions
Place frozen chicken breast in pot and cover with water. Boil about 20-30 minutes or until chicken is cooked through. Remove chicken from water and let cool. In the meantime, get a large bowl and mix together cream of mushroom, cream of chicken, and rotel. Crunch bag of Doritos into small pieces. Once your chicken has cooled enough to touch, shred it. (I use a fork to do this) Add chicken to your mixture and stir well.
In a 9x13 cake pan spray liberally with canola oil or similar non-stick spray. Place half bag of Doritos on the bottom and spread evenly. Next layer on half of your mixture, then half your bag of cheese. Repeat. Place casserole in oven at 425 degrees F for 30 minutes.
