Ingredients
* Cooked Potato, 1000 grams
* Egg, fresh, 6 small
* Peas, frozen, 1 cup
* Yellow Sweet Corn, Frozen, 1 cup kernels
* *cooked red onion, 1 cup
* *Salt - Iodized Sea Salt, 0.5 tsp
* Pepper, black, .5 tsp
* Paprika, 1 tsp
Directions
Boil or bake potatoes until just done, still a little firm.
Slice them into 1cm thick slices.
Fry the onion in a cast iron frypan until golden. Remove.
Fry the potatoes until golden.
Beat together eggs, milk and spices.
Add onions, corn and peas to egg mix.
Pour egg mix over potatoes in frypan. Shuffle around mixture so it's under and between potato slices.
Cook for about 5 minutes on stovetop to brown the bottom of the frittata.
Put in hot oven for about 30 minutes.
Remove and let cool a bit before taking out of frypan.
