Introduction

Ingredients

    2 4 ounce raw boneless skinless chicken breast
    1 tsp Italian Seasoning
    1/2 tsp Garlic Powder
    1/4 c. fat free liquid egg substitute
    1/2 c. unprocessed bran

Directions

1. Place chicken in large sealable bag. Remove as much air as possible before pounding the chicken to a 1/2 inch thickness. Set aside

2. In a shallow bowl or pie pan, mix the unprocessed bran, Italian seasoning, and garlic powder. Add additional spices if you like.

3. Place egg substitute in a seperate medium bowl. Coat raw chicken on both sides of the egg substitute before placing it in crumb mixture. After placing the chicken in the crumb mixture, coat thoroughly on both sides.

4. Spray a large skillet with nonstick spray, and bring to medium high heat. Place chicken in the skillet and cook for 4 minutes on each side or until chicken is cooked through.

5. Once the chicken is cooked top with cheese and sauce, and serve!

This recipe only includes the chicken. Tastes great with your own sauce and grated parm (or reduced fat shredded mozzerella) over a serving of whole grain pasta.
