Introduction

What to do with all the lovely squash your garden grows or your neighbor gives you? Cut ends off, halve and slice into half-circles. Boil a big pot of water, and throw the yellow squash or zuchinni into it. Boil until tender. Drain. Mash it a bit with a potato masher. Mix with other ingredients. Bake for 20 to 30 minutes. Ingredients

    Halve and cut in half circles as much yellow squash as you can boil for 15 minutes to get it tender. Use Zuchinni if you need to.
    I make this for potlucks, so I use:
    2 to 6 yellow squash (large ones, or use zuchinni too)
    Let's say 5 to 10 cups of yellow squash
    4 to 8 red and/or green peppers
    1/2 to 1 stick butter
    1/2 to 2 cups of sour cream
    1 tsp. Sriracha Sauce
    1 tsp. salt
    1 cup shredded cheese either on top or mixed in
    Mix this all up real well. Pour into a large casserole or mix it in the casserole dish. Cover with a little of the shredded cheese. Paprika or Italian seasoning on top? You decide.

Directions

Mix and spread your red and green pepper in the casserole bottom in the 1/2 to 1 stick of melted butter. Squirt in some Sriracha Sauce, but not too much cuz it is SPICY! Add 1 tsp. salt and 1/2 to 1 cup of sour cream, and stir it around. Drain and mash the squash and stir it in with the butter, sour cream, peppers and spice. Stir in most of the shredded cheese or sprinkle it on top. Bake for 20 to 30 minutes at 350 degrees.

    Good
    It was not as good as I had hoped for. It is not "No Carb" as squash has carbs but it is a Low Carb alternative. I left out the bell peppers as I don't like them cooked with squash. I left out the Sriracha Sauce as I don't know what it is and don't like hot sauce. - 8/24/11
