Introduction

Number of Servings: 6

Ingredients

    1 small onion, chopped
    2 large carrots, peeled and thinly sliced
    1 medium zucchini, sliced
    2 cloves garlic, minced
    2 15 oz cans kidney beans, drained
    6 cups beef broth
    1 28 oz can diced tomatoes, undrained
    1 t dried basil leaves
    1/2 t. dried oregano leaves
    1/2 t. salt
    1/4 t. pepper
    8 oz cooked whole wheat pasta shells
    1/4 cup grated parmesan cheese

Directions

Combine all ingredients except maccaroni and parmesan and bring to a boil. Cover and reduce heat - simer for 20-30 minutes. Add cooked pasta. Sprinkle with parmesan and serve. Makes 6 servings.


OR:

Combine all ingredients except macaroni and Parmesan cheese in the crockpot. Cover cook on Low 8 to 9 hours or on High 4 to 5 hours. Stir in macaroni. Serve sprinkled with cheese. I substitute 1-1/2 t. Italian seasoning for the basil and oregano.

    Very Good
    This is very much like a recipe I got from my Aunt years ago, except that I use one undrained can of kidney beans, and usually add 1 can of drained garbanzos. The original recipe had homemade beef meatballs, which I sometimes add. - 7/8/15

    The soup was okay, but kind of plain. I probably wouldn't make it again. - 10/15/09
