Introduction

Ingredients

1 lb. whole wheat orzo or other small size pasta
1 lb. boneless, skinless, chicken breasts, cubed
2 large red bell peppers, diced
1 large red onion, sliced thin
4 med tomatoes, finely chopped
1/4 c. diced green onions
1 jalapeno pepper, seeded & minced
3/4 c. lime juice
1/2 tsp.salt
6 TB. fat free sour cream
Directions
Prepare pasta according to directions, drain, and set aside.
Meanwhile, in a skillet, cook the chicken over medium-high heat. Add the red bell peppers and onions, and cook until chicken and veggies are cooked-- about 5 more minutes.
In a med bowl make the salsa-- mix tomatoes, green onions, jalapeno, lime juice, and salt.
Toss together the cooked pasta, salsa, and chicken mixture until well incorporated.
Top each serving w/ a TB of sour cream
