Ingredients

One 16 oz can of Rosarito Fat Free Refried Beans
4 corn tortillas
2 cups shredded romaine lettuce
1/2 cup reduced fat cheddar cheese
2 medium tomatoes, chopped
2 Tbsp of Kikoman Lite Soy Sauce
Directions
Preheat oven to 400
Place corn tortillas on oven rack in preheated oven
Cook for approx 5 min then turn tortillas - cook for 3- 4 more minutes until gold brown and crispy - watch carefully - they can burn quickly.
While tortillas are cooking, place 1 15 oz can of fat free refried beans into microwave-safe bowl. Add soy sauce, mix int bean mixture and cover. Heat in microwave 2 min.
Wash, rinse and chip romaine lettuce and tomatoes.
When tortillas are crispy, remove from oven and spread 1/2 cup of bean mixture on tortilla. Add 1 Tbsp reduced fat cheddar to top of bean mixture. Add lettuce and tomato. Rotel tomatoes work well too if you are out of fresh tomatoes. Alternative ideas: You can add enchilada sauce to the beans, or spice it up with cumin and other seasonings. Lots of ways to enhance this easy recipe.
