So you slept in and you want that home cooked breakfast knowing you probably won't have lunch. Craving something pancaky but needs to be gluten free? Almond meal flour is the way to go. Ingredients

Pancake batter – mix all these together in a small bowl
½ cup Bob’s Red Mill Finely ground Almond Meal/Flour
1 egg
¼ cup water
½ packet of Truvia
2 tsp cinnamon
Fruit Topping
1tbsp unsalted butter
½ medium apple (cubed)
¾ cup blackberries
Cinnamon to taste
Directions
1. Pancake batter – mix all these together in a small bowl
2. As you heat up the skillet for the pancake, start making the fruit topping
3. In a sauce pan, melt butter and add the rest of the ingredients. Allow to simmer as you are making the pancakes.
4. Spray skillet with buttery non-stick spray (or something to your liking) and pour pancake mixture as you see fit. In the picture, my mixture made three pancakes.
Makes three 3 ½ “ round pancakes with lots of fruit to top.
