Ingredients

    Beans, black, 1 cup (remove)
    Beans, red kidney, 1 cup (remove)
    *Shitake Mushrooms, fresh, 2 cup diced very fine
    Carrots, raw, .5 cup, chopped (remove)
    Serrano Peppers, 1 pepper (remove)
    Tomato Paste, .1875 cup (remove)
    Water, tap, .5 cup (8 fl oz) (remove)
    *Cumin seed, 1 tbsp (remove)
    Bay Leaf, 1 tbsp, crumbled (remove)
    Thyme, ground, 1 tsp (remove)
    *Green Chile Peppers, Diced, 4 oz (remove)
    Red Ripe Tomatoes, 1 medium whole (2-3/5" dia) (remove)
    Paprika, 1 tbsp (remove)
    Milk, 2%, .5 cup (remove)
    Butter, salted, 1 tbsp (remove)
    Garlic, 8 cloves (remove)
    *Salt, Morton Coarse Kosher, 3 tsp (remove)

    Ground Beef (extra lean), 1 unit, cooked (yield from 1 lb raw m (remove)

Directions

Peel and dice yucca, cutting out center string. Boil with 1 diced onion, 4 cloves of garlic, 1 chicken bullion for 1 hour or until soft. When soft, mash yucca (like potatoes) with milk and butter. Add some boil water if needed for texture.

Sautee carrots, onions, remaining garlic in pan sprayed with pam and 1/2 tbsp of EVOO. When carrots are almost soft, add ground beef and sautee with veggies until cooked through. Mash and add black and kidney beans. Spray pan with Pam and add 1/2 tbsp EVOO. Sautee mushrooms diced very fine in pan. Add to ground beef mixture.

Dice and add chiles, tomatoes, tomato paste, water, all remaining spices. Mix into beef mixture and simmer 10 to 15 minutes.

Spray casserole dish with nonstick spray. Spread meat mixture in bottom of pan. Top with mashed yucca. Bake at 375 degrees for 20 minutes. Top with cheese and bake for an additional 10 minutes. Can be broiled for a few minutes if you want the cheese browned.
