Ingredients
-
2 cups whole wheat flour (I used half ww pastry and half stone ground ww)
3 (or 4 for a moister bread) medium overripe bananas
equivalent of 2 eggs
1/4 cup applesauce
1/2 cup of milk
2 tspns baking soda
1 tspn baking powder
1 tspn ground cinnamon
1 tspn vanilla extract
1/2 tspn salt
3/4 cup of splenda or baking sugar substitute, though if you chose to you can use real sugar, but adjust calories to suit
3/4 to a cup of walnuts chopped (you can leave out, substitute something else for them, but again adjust calorie intake if you change this recipe)
1/2 cup of rasins (I know recipe says 1 cup, but I could not get it to say 1/2 a cup)
Directions
Preheat oven to 350
Mix dry ingredients in one bowl mixing together well
Mash bananas, mix in all other wet ingredients and mix well
Then pour wet ingredients into dry and mix well, pour into a nonstick loaf pan, sprayed with some cooking spray and cook for 50 minutes, check by sticking a toothpick in center, it should come out without being wet, otherwise try another 5 minutes or so. Slice and eat, warm or cold this is a winner
