Ingredients

    1 lb. large shrimp
    1/2 tsp. sugar
    1 tsp. soy sauce (gluten free)
    1 1/2 tsp. cornstarch, dissolved in 1 T. water
    3 T. olive oil
    1/2 tsp. salt
    1/3 c. chicken broth
    1/2 c. sliced water chestnuts
    1 1/2 c. snow peas (peapods)
    1 large purple onion, sliced
    2 small stalks celery, sliced
    1 c. fresh mushrooms, sliced
    1 c. almonds
    4 c. rice, cooked

Directions

Cook rice and keep warm till ready to serve. Wash and devein shrimp. Cut lengthwise. Mix sugar, soy sauce, cornstarch and water. Heat oil in large frying pan. Add salt, and shrimp. Cook until white. Add broth, snow peas, celery, onion, and water chestnuts. Cover and cook 1 1/2 minutes. Add soy sauce and serve over rice. Serve immediately with dinner. Enjoy!
