Ingredients

    4 c. cooked noodles (gluten free elbow 8 oz. package)
    9 oz. can tuna in water
    1/4 c. diced green pepper
    1/4 c. diced red pepper
    1 small diced red onion
    1/4 tsp. salt
    8 oz. mushrooms
    1 c. grated cheese
    1 c. light sour cream

Directions

Preheat oven to 425 degrees. Grease 1 1/2 quart baking dish. Combine one half the cheese with the tuna and add the other ingredients. Sprinkle the remaining cheese on top. Bake for 20 minutes or until done.
