Introduction

Number of Servings: 10

Ingredients

    1 16 oz bag of black beans
    1 green bellpepper
    2 garlic cloves
    1 can fire roasted tomatos
    1 quart low sodium chicken stock
    1 onion

    Spices: cumin, chili powder, chipolte powder, salt and pepper to taste

Directions

soak beans over night

in crock pot-add beans, chopped veggies, browned sausage, and can of tomatos

cover with chicken stock and water if needed

cook on low for 6-8 hours

take about 1/2 of the beans (no sausage) out and blend together in blender for creamier soup

makes approx 10: 1.5 cup servings.

serve over brown rice (.25 cup) (optional) and top with reduced fat sour cream/shredded cheese (optional)

    I loved this! When I get in the mood for soup, I love getting Panera's black bean. But most of the time I don't feel like driving all the way to Panera. Your soup is even better than theirs! Thanks for sharing. - 6/26/10

    I wondered about the sausage also, but have decided, based on the chicken stock base, to try a chicken sausage...? Sounds simple but yummy! - 8/17/10
