Introduction

A delicous way to low carb and still enjoy pancakes again! Serve with sugar free syrup or your favorite berries - or better yet freshy whipped *real* whipped cream! (No sugar added of course). High in protein and fiber and low in net carbs (only 4.3 per serving) this will satisfy the urge for early morning comfort food while not derailing your low carb lifestyle.

Ingredients

    1/2 cup of ground flax seed meal
    2 eggs
    1/4 cup of half and half
    1/4 cup of cottage cheese
    2 Tablespoons of cocount oil (or melted butter)
    1/4 teaspoon baking powder
    cinnamon and vanilla to taste

Directions

Mix all ingredients together until batter is smooth. Pour onto preheated griddle until lightly browned, flip and brown second side. Serve as you would your favorite pancakes - but keep it sugar free! Makes 2servings.
