Introduction

Cooked fresh corn salsa made with simple ingredients served on crackers or salad. Cooked fresh corn salsa made with simple ingredients served on crackers or salad.

Ingredients

    1 slice bacon finely chopped
    1 ear sweet (remove corn from cob)
    1/2 chopped red bell pepper
    1/4 chopped medium yellow onion
    1/4 diced red tomato
    1/4 c. sliced white mushrooms
    1 Tbs olive oil
    salt and pepper to taste

Directions

using medium skillet on medium heat, heat the olive oil, add all the ingredients. Stir occassionally. Cook until pan starts to carmelize. Add 1/4 water, stir to combine glazing with ingredients, cover. Reduce to glaze, stirring occasionally until corn is done. May need to uncover during final stages. Can eat hot, but tastes best cold. Serve on crackers or as a salad toping. Very flavorful.
