    1 29 oz can pumpkin
    24 oz 1-2% cottage cheese
    1 c sugar free apple sauce
    10 eggs
    16 scoops vanilla protein powder
    8 cups organic thick rolled oats
    2t pumpkin pie spice
    2 t baking soda
    2 t cinnamon
    2 T stevia powder

Directions

Bake at 350 until no longer wet in the center
time varies depending on bread, muffins or bars-- start at 40 minutes and keep an eye on them

this recipe makes 64 servings (small size) or 32 bigger bars

you can also add nuts or dried fruit to these and it enhances the flavor
