Introduction

I threw a bunch of items I had in the fridge together and came up with a scrumptious winter warmer that sneaks a lot of veggies and nutritional goodies into your day. Even the teenage son came back for seconds. I threw a bunch of items I had in the fridge together and came up with a scrumptious winter warmer that sneaks a lot of veggies and nutritional goodies into your day. Ingredients

    4 bunches of broccoli
    3 medium potatoes
    2 litres chicken or vegetable stock/broth
    3 small onions
    1 green onion and a few sprigs of parsley (optional)
    1/2 cup low fat cheddar cheese, grated (optional)
    1 tsp cayenne pepper (optional)

Directions

1. Combine the broccoli, potatoes, stock, onions and cayenne in a large pot and simmer until vegetables are soft.

2. Remove from heat and use stick blender to combine thoroughly.

3. Chop the green onions and parsley coarsely. Ladle soup into deep bowls. Sprinkle in green onions, parsley and cheese for garnish.

Makes about 15 one cup servings (your mileage may vary). Calorie calculations presume you've used all optional ingredients. Obviously use vegetable stock if you prefer vegetarian soup.
