Ingredients

    1 large can of kidney beans
    1 lb ground turkey
    1 small can (6 oz) tomato paste
    32oz tomato sauce
    16 oz can diced tomatoes
    1 package chili powder mix
    3 or 4 jalepeno peppers, diced
    1 green bell pepper, chopped
    2 cloves garlic, diced
    1 small onion, diced
    2 tbsp extra virgin olive oil

Directions

In a pan, add extra virgin olive oil and saute diced onions, peppers, and garlic until soft. Add ground turkey and cook until browned throughout.

Combine kidney beans, tomato paste, tomato sauce, diced tomatoes, and chili powder in a large crock pot. Stir in turkey, onion, peppers, and garlic. Cook on high for three to four hours or low for six to eight hours.

Makes approximately ten 1.5 cup servings. Great with low-fat sour cream and whole grain crackers!

Note: This recipe makes a HOT chili. For less heat, add only one or two jalepeno peppers, or eliminate jalepeno peppers entirely.
