My Dad's Favorite My Dad's Favorite
Number of Servings: 8

Ingredients

    8 med potatoes (preferably red)
    1 stick unsalted butter
    4 c 2% milk
    enough water to cover potatoes
    salt and pepper to taste

Directions

peel and dice potatoes, add to large pot, add enough water to cover, salt water
cook on high until boiling, let boil for about 5 minutes or until potatoes are slightly softened
reduce heat to medium-high, add milk and butter
let simmer until potatoes are soft (to your liking) salt and pepper to taste
we love to serve with a side of saltines

    Good
    I used what I had on hand, such as: aging Idaho potatoes, salted butter and 1% milk. I also added 1/2 a large white onion diced and about 3/4 cup of celery. Next time I will put it in the food processor or blender to smooth it out but a fork worked well. I will use this recipe again . - 1/15/13
