Introduction

Ingredients

    1 small onion, minced
    4 garlic cloves, minced
    1 1/2 lbs large shrimp, peeled and devained
    2 tbsp extra virgin olive oil
    1 - 28 oz. can chopped tomatoes
    2/3 cup Crumbled Feta Cheese
    Pepper, to taste
    2 tbsp fresh oregano, chopped
    2 cups spaghetti noodles, cooked

Directions

Preheat oven to 400 degrees. Heat olive oil in a large oven-proof skillet over medium heat. Add minced onion and cook for two minutes, stirring often. Add garlic and cook an additional minute. Add tomatoes and their juice and bring to a boil. Cook until tomato juices thicken, about 5 minutes. Season with pepper to taste.

Remove tomato sauce from heat and stir in shrimp. Sprinkle with Feta cheese.

Bake until cheese melts and shrimp are cooked, about 10 minutes. Sprinkle chopped oregano and serve hot, over cooked pasta.

    This was super good, I used smaller shrimp (and had to devein them myself, ick) and they took a lot longer to cook. But the end result was very decadent, and the cheese was baked to perfection. Used whole grain spaghetti as a side. Thanks for the recipe! - 8/21/10
