Introduction

This is healthy and yummy! They come out quite dense- and moist. This is healthy and yummy! They come out quite dense- and moist.
Number of Servings: 72

Ingredients

    2 cups shredded zucchini
    1 cup shredded carrot
    3 eggs
    1 tsp vanilla
    2/3 cup olive oil
    1/3 cup applesauce
    1 cup brown sugar
    1 cup white sugar
    1 cup whole wheat flour
    1 cup white flour
    1 tsp salt
    1 tsp baking powder
    3 tsps cinnamon
    1 tsp nutmeg
    1 tsp allspice
    1 tsp cloves
    3/4 cup walnuts, chopped

Directions

Oven to 350. Mix wet ingredients. Mix Dry ingredients Separately. Mix them together and put in well greased mini -muffin pan. You can also use a mini loaf pan with more cooking time added (makes 6 loaves). Enjoy!
