Introduction

A great dish for the family (my 3yr old loves it). This version is gluten free. Can substitute roasted/rotisserie chicken or ground turkey breast to lower the fat & calories. Ingredients

    1 Egg, beaten
    2 Egg whites, beaten
    Mixed Vegetables, frozen, 2 package (10 oz) (any blend)
    Sesame Oil, 1 tbsp
    3 lbs Ground Chicken OR 1 rotisserie chicken, cooked, meat removed (no skin or fat)
    2 small cans Water chestnuts
    6TB Tamari Sauce (Gluten free)
    2 Brown rice boil bags (success or minute rice)
    Olive Oil cooking spray
    salt & pepper to taste, if desired

Directions

Cook rice in microwave according to box directions. Spray a large pot with cooking spray, and cook chicken untiul browned. Break apart pieces with spoon while cooking. In another pot, spray cooking spray & add frozen veggies. Cook until lightly browned, then add beaten eggs. Stir until eggs are cooked. Add veggie mix to chicken, along with sesame oil, tamari, water chestnuts and rice. Stir until well blended.
