Ingredients

1/2 cup (122grams) egg beaters
1/2 cup all-purpose flour*
1/2 cup nonfat or lowfat milk
3 packets of truvia (3rd packet optional)
1 tsp vanilla extract
1/4 tsp salt
1/2 tbsp brummel and brown butter, melted and cooled slightly
Lemon juice to taste, optional
Non-stick cooking spray
(can also sprinkle with powdered sugar, if you like)

* The taste is best with all-purpose white flour, but I do use a mix (0.25cup white flour, 0.25cup wheat, and 0.5 tsp ground flax seeds, 1 tbsp Kretschmer: Original Toasted Wheat Germ) and it works ok too...but, baking time, taste, and look of the "baby" are different...but, still yummy!
Directions
Preheat oven to 425 degrees. Place ovenproof frying pan in the oven to heat.
Whisk together eggs, flour, milk, 2 packets of truvia, vanilla, salt and melted butter until smooth.
Remove pan from oven and spray with nonstick cooking spray, then pour the batter into the hot pan and put it back in the oven.
Bake for 15-20 minutes, until the golden brown. Slide from the pan onto a serving plate and sprinkle w/ remaining truvia packet (or, if you like, powdered sugar instead of truvia) and lemon juice. Serve immediately.
The recipe can serve ONE REALLY HUNGRY person...or, two people :)
