Ingredients

    8 oz whole grain linguine pasta
    1 table extra virgin olive oil
    2 tables smart balance butter, melted
    1 cup chopped onion
    1 table minced garlic
    14 oz small shrimp, peeled and deveined
    1/3 cup instant nonfat dry milk
    1 cup water
    1 table cornstarch
    1/8 cup blackening seasoning
    8 tablespoons grated Parmesan cheese



Directions

1.Cook pasta in a large pot of boiling water until al dente; drain.
2. Heat olive oil in saucepan. Saute onion and garlic over medium heat until tender. Add butter and melt. Add shrimp; saute over high heat for 1 minute, stirring constantly. Dissolve milk in cold water and stir in along with the cornstarch. Cook, stirring constantly, until sauce thickens. Stir in blackening seasoning and parmesan cheese.
3. Add pasta and stir together.

    Very tasty. I made it for my boyfriend and he loved it. I also added scallops and sun-dried tomatoes. He really liked the Old Bay seasoning I used for the cajun spice. Quick to make low cal. Yummy sums it up. - 3/11/11

    Incredible!
    I didn't use the shrimp but added mushrooms and steamed broccoli. It was great! A new favorite. :) - 9/17/10
