Introduction

Ingredients

    1 bunch scallions, chopped
    3 garlic cloves, minced
    1 cup lentils, rinsed
    1/2 cup brown rice, rinsed
    1/4 cup wild rice, rinsed
    1/4 cup butter
    2 tbsp slivered almonds
    1/2 tsp dried thyme leaves, crushed
    2 1/2 cups chicken broth

Directions

In a large skillet, saute the onions, garlic,lentils and both rices in butter until the onion is tender, about 4 minutes.

Add the almonds, thyme and chicken broth and bring to a boil. Reduce heat and simmer, covered, for about 30 minutes or until liquid is absorbed.
