Ingredients

1/2 cup unsweetened pure cocoa powder
2 ounces Bakers bittersweet baking chocolate
1/2 cup boiling water
1-1/3 cups Splenda
2 teaspoons pure Black Walnut extract
4 large egg whites (save yolks for frosting)
2 cups whole-wheat pastry flour
1 cup unsweetened apple sauce
2 teaspoons baking powder
1/2 teaspoon baking soda
1 cup low-fat buttermilk
Directions
Preheat oven to 350 degrees F. In a small container, add Bakers chocolate and cocoa powder. Pour in 1/2 cup boiling water. Stir with a rubber spatula until the chocolate melts and set aside. In a large mixing bowl, sift flour, Splenda, baking soda, baking powder and sea salt. Separate eggs and reserve yolks for frosting. Stir in egg whites, applesauce, buttermilk and extract.
Mix with rubber spatula until well-combined. Pour in chocolate mixture and stir with spatula until well-combined. Spray two 8-inch round cake pans
with cooking spray. Divide batter into two pans. Bake at 350 degrees F for 35 to 40 minutes or until a toothpick inserted into center comes out clean. Immediately turn onto a wire cake rack to cool completely. When cakes are cooled completely frost first cake with half the frosting, top with second cake and frost top. Allow to cool and slice.
