Introduction

This is a great combination of smoky and sweet - get the flavour of the barbecue without needing to grill a thing! This goes great in wraps, in salads, or over brown rice. Ingredients

    1 block extra-firm tofu
    1/2 cup barbecue sauce
    2 tbsp maple syrup
    3 tbsp cider vinegar
    1 tsp liquid smoke

Directions

Drain liquid from the tofu and chop the block into equally-sized small pieces (I usually do 64). Mix all the other ingredients together in a deep bowl or plastic container and stir until well-mixed to make the marinade. Put small tofu pieces into the marinade, making sure all the pieces are covered, cover the container/bowl, and let it marinate in the refrigerator for at least 2 hours (I usually put mine together in the morning and let it marinate all day until I'm ready to cook dinner).

Once marinated, pour tofu and remaining marinade into a pan and cook until light brown and crispy on all sides.

Makes 4 servings, where each serving is 1/4 block of tofu (16 small pieces).
