Introduction
I took a recipe that a friend had and tweaked it a bit (to make it a bit healthier)....it's AMAZING!! Enjoy! I served it over tri-color fusili pasta, but it would be equally delicious with rice, or even patty shells or biscuits. Ingredients

1 package boneless, skinless chicken breast (about 1.5 lbs, 6 breasts)
2 Tbsp. margarine
1 can fat free cream of chicken soup
1/2 cup low sodium chicken broth
1/2 packet Good Seasons Italian Dressing Mix
8oz package fat free cream cheese
1 cup (approx) sliced fresh mushrooms
12 oz. package frozen peas
Tips
You can also keep the breasts whole instead of shredding them. It's just as good. Also, you can use more of the Italian seasoning if you like, but it will kick up the sodium.
Directions
Place chicken breasts in bottom of crock pot. Put margarine, chicken broth and dressing packet on top. Cook on low 5 hours.
Shred chicken (I just used 2 forks and did it right in the crock pot), add soup and cream cheese (you can soften the cheese first so it melts quicker, but it's not necessary), stir until it's well mixed.
Add peas and mushrooms, cook on low for an additional hour. Serve over pasta or rice with a side salad!
Makes 6-3/4 cup servings.
