Introduction
This yummy and easy dinner is a favorite w/ the "pancake loving" pre-schooler. We serve it with non-fat sour cream or non-fat greek yogurt to "dip" in (for the adults, we mix it with a little Sriracha HOT Chili Sauce for an added yummy factor). Hope you enjoy! Ingredients

Edamame, Shelled, Frozen, 0.5 cup
Carrots, raw, 0.25 cup, grated
Red Onions, raw, 1 cup, chopped
Alfalfa sprouts, 0.5 cup
Fat Free Cheddar Cheese, 28 gram(s) (about 0.25 cup)
Fiber One Buttermilk Pancake Mix, 160 gram(s) (about 1.5 cup)
Olive Oil Cooking Spray
Optional:
Sour Cream or Plain Greek Yogurt (I used Fat Free)
Sriracha HOT Chili Sauce
Also, we've done this with other veggies too...this variety is a family favorite...but, any would work. I sometime even add spices or sauce to the veggies while they cook for a "change."
Directions
Spray non-stick frying pan with cooking spray. Cook onion until tender. Add other vegetables and cook about 5-10 minutes. (add salt and pepper to taste)
Mix pancake mix according to instructions on box (if you don't like fiber one, any box mix will work too).
Add the vegetables to pancake mix (I usually allow them to cool just slightly first). Add cheese. Mix well.
Cook the pancakes as normal.
Serve with "dipping sauce." Enjoy!
