Ingredients

    2 cups flour
    1 tsp baking soda
    1 tsp cinnamon
    1/2 tsp salt
    1 cup tofu mashed
    1/2 cup applesauce, unsweetened
    1 cup brown sugar (or fructose)
    1 cup canned pumpkin (pie or plain)
    1/2 cup softened butter or vegetable oil (for vegan recipe)
    3/4 cup chopped pecans

Directions

Mix Dry ingredients. Mix wet ingredients until smooth. Stir in pecans. Bake at 325 for 18-22 minutes.
