Your family and friends will never have a clue that this is gluten free cake. They will never know that it is a mix, right out of a store-bought package - unless you confess! It is soft, moist, delicious and amazingly addictive.

Ingredients

    1 Spice Cake Mix
    3 large eggs
    2/3 cup oil
    3/4 cup water

Directions

Heat oven to 350*F. Lightly spray or grease pans (or paper liners for cupcakes).

Combine 3 eggs, 3/4 cups water and 2/3 cup oil. Add to cake mix and blend well.

Bake for approximately 30-35 minutes in two 9" round pans, about 35-40 minutes in 9" x 13" pans, or about 20-25 minutes for cupcakes. Cake is done when toothpick inserted in center comes out clean.

Let the cake cool and top with your favorite frosting or whipped topping. I strongly suggest trying Namaste Foods' Toffee Frosting. Don't taste it while you frost the cake or you might not have enough for the cake!

    I made this earlier today, just the plain cake. I thought maybe I would dust the tops with powdered sugar, but it wouldn't be nearly as pretty or yummy as the picture - 10/15/12
