Ingredients

    1 doz shrimp
    1tblsp. curry powder
    1tblsp. salt
    1/2 medium onion chopped
    1 sprig of Thyme
    1/4 green bell pepper
    1/2 carrot diced
    4 oz. olive oil
    1tblsp butter
    1 cup water

Directions

Heat oil in a skillet, saute onions then remove them from skillet. Add curry powder to the hot oil, stir continuously for about 1 minute or until the color changes.

Now add all the vegetables, including the sauteed onions, and water to the skillet. Add salt to taste. Allow the ingredients to boil until the vegetables are semi-soft.

Add the shrimp to the vegitables and reduce heat, when the color of the shrimp starts to change, add butter and thyme.

Simmer until gravy starts to develop.

Makes 3 servings, good over Rice.

(you can use frozen or thawed pre cooked shrimp)

    I think the sodium is a typo. Surely you don't use a whole tablespoon of salt, I think it should be a teaspoon. - 11/17/10
