Introduction

This is a great, very low fat & easy alternative to Chipotle's Cilantro Lime Rice for all Mexican dishes. I use this rice in my own Homemade Chipotle Bowl.
Ground Turkey, Black Olives, Lime Rice, Pico De Gallo, Pureed Avocado & a 1/2 serving of Guiltless Gourmet Tortilla chips. You can add some plain greek yogurt & a little Raw cheddar cheese. Organic Valley makes the best Raw cheeses. Enjoy!

Ingredients

    1 cup Jasmine Rice (I use Safeway 365 Organic brand)
    1.5 c Water - Filtered if available
    Juice of 1 lime
    Zest of 1 lime
    1/2 tsp salt (optional & not included in nutritional facts)
    Cilantro (optional as well. Add to taste)

Directions

Bring water, lime juice & zest of lime to a boil
Stir rice into boiling water
Cover with a tight fitting lid & cook for 18-20 minutes
Remove from heat & let stand for 5 minutes
Fluff with a fork
