Number of Servings: 4

Ingredients

    5 cups chicken stock or broth
    1 cup orzo, uncooked
    1/4 cup lemon juice
    3 large eggs
    1/2 teaspoon black pepper
    salt to taste

Directions

1) Bring chicken stock/broth to a boil over medium-high heat.
2) Add orzo to chicken stock/broth and boil over medium heat for 10 minutes.
3) While orzo cooks, in a separate bowl, whisk together eggs and lemon juice.
4) After orzo has finished cooking, reduce heat to low.
5) Remove 1 cup of chicken stock from pot. Slowly drizzle stock into egg mixture while whisking continuously.
6) Slowly pour egg mixture back into soup mixture while stirring constantly. Stir in black pepper and salt to taste. Allow soup to thicken for 3-5 minutes over medium-low heat.

Makes 4 servings.
