*Whole Wheat Flour, 1 cup
Oats, .5 cup
Cinnamon, ground, 2 tsp
Baking Powder, 2 tsp
Baking Soda, 1 tsp
Banana, fresh, 4 ripe
Brown Sugar: Light, 24 tsp
*Motts unsweetened Applesauce, 1 oz
egg white, fresh, 4 large
Buttermilk, lowfat, 1.25 cup
Vanilla extract, imitation, alcohol, 1 tsp
*Nestle Toll House Chocolate Chips, 8 tbsp
Directions
makes 18 muffind using an ice cream scoop to keep uniform
combine flours, oats, cinnamon, baking powder, baking soda, salt and banana and belnd on low for 2 minutes. add sugar, applesauce, eggs and buttermilk. blend for 2 minutes on medium. add vanilla and mix until well combined. portion batter into muffin cups and place 8 or 9 choc chips on top of each muffin.
Bake at 400 for 13 - 15 minute depending on how full your muffin cups are. let cool and serve.
