Introduction

These are healthy powerhouse breakfast cookies!! :-) You can substitute raisins for other nuts or omit altogether. This is NOT my recipe, but I got it from another health conscious person and had to share!! Ingredients

    1/4 cup canola oil
    1/2 cup unsweetened applesauce
    1/2 cup Sucanat
    2 egg whites
    1 egg
    2 cups grated carrots
    1/4 tsp salt
    1 tsp pumpkin pie spice*
    1 tsp baking soda
    1 1/2 c oats
    1/4 cup flax meal**
    1 cup spelt flour
    1 cup raisins
    1/2 cup chopped walnuts



Directions


Preheat oven to 375°F.

Mix together oil, applesauce and sucanat. Add egg whites and regular whole egg and beat well. Mix in grated carrots. Add remaining dry ingredients and beat until just blended. Stir in raisins and nuts. Using a tablespoon, drop large spoonfuls onto a baking sheet. Bake 10 to 12 minutes. Let cool on the pan and move to a rack.

*You can make your own pumpkin pie spice using a mix of ginger, nutmeg, allspice (or cloves)

**If you don't have flax meal, just grind up some flax seeds in a coffee grinder or blender :-)

Makes approximately 24 large breakfast cookies!
