Introduction

This frittata can be varied depending on the vegetables you have on hand. It can be made vegetarian by excluding the bacon bits. I've had this for special breakfasts & for a light lunch or dinner with a healthy side salad or fresh fruit. This frittata can be varied depending on the vegetables you have on hand. Ingredients

    fresh mushrooms sliced
    fresh bell peppers (red, yellow & orange) chopped
    red onion chopped
    fresh broccoli, chopped
    salt & pepper to taste
    cooked whole wheat spaghetti
    Egg beaters
    Bacon bits
    Low fat shredded cheese - Mexican blend or similar
    Olive oil for sauteing veges

Directions

Cook pasta to desired doneness or use cooked, left-over spaghetti. Saute veges in large oven-safe skillet with olive oil over med high heat until tender. Season to taste with salt & pepper. Reduce heat to medium-low & add Egg beaters. Sprinkle with bacon bits. Top with shredded cheese. Cook for about 10-15 minutes, then place in 350F oven & cook for another 10 minutes or until set in center. Remove & let sit for a few minutes. Cut into 6 wedges. Light & delicious with a healthy side salad or fresh fruit.
