A refreshing salad, great in a wrap or on a bed of lettuce. A refreshing salad, great in a wrap or on a bed of lettuce.

    1 lb. peeled, deveined, and cooked shrimp
    3 green onions, chopped
    2 medium celery stalks, chopped
    4 baby carrots, grated
    1/4-1/2 tsp dried dill weed (to taste)
    1/2 tsp Old Bay Seasoning
    Celery salt and pepper to taste
    3 tbsp Light Mayo


Peel, devein, and boil shrimp. Drain and allow to cool.

Chop shrimp coarsely. Add prepared green onion, celery, carrot, dill, Old Bay, and mayo, and mix well. Add seasonings to taste.

Serve chilled, on a bed of lettuce or in a wrap.

Yields about 5 1/2-cup servings
