Ingredients

1 tbspn sunflower oil
2 cloves garlic, crushed
1 medium onion, chopped
0.5 cup green bell pepper, chopped
0.5 cup red pepper, chopped
2 tbspns Indian-style curry powder (or to taste)
2 tspns chilli powder (optional)
2 tspns garam masala
1 tspn cumin seed
1tspn dried or ground coriander
1 tspn ground ginger
2 cups (approx. 200g) whole green lentils (uncooked)
1 400g can tomatoes (no added salt)
1 vegetable stock cube (regular size)
1000ml water (more if preferred)
1 tspn salt (optional)
Directions
1. Heat oil in pan over medium heat
2. Saute garlic, onion and peppers until onion is transparent
3. Reduce heat to low and stir in all spices (except salt)
4. Add lentils and stir through until lentils are coated with spice mixture
5. Add tomatoes, stirring to break down whole tomatoes into large chunks
6, Add half the water and crumble in stock cube
7. Simmer uncovered, adding remaining water as mixture thickens
8. Cook until lentils are soft, but not mushy (45 - 60 minutes)
10. Serve with rice or chapatis
