Introduction

This recipe is an adaption of Cook's Illustrated's recipe for beef tacos. The taco meat is wonderful in a salad, too, which will reduce the calorie count! Ingredients

    1 pound ground turkey (NOT extra lean)
    1 medium onion, chopped
    3 cloves of garlic, minced
    1 teaspoon ground cumin
    1 teaspoon ground coriander
    2 Tablespoons chili powder
    1/2 teaspoon ground oregano
    1/2 teaspoon cayenne pepper (quite hot -- reduce for less heat!)
    1/2 cup canned tomato sauce (not from a jar)
    1/2 cup low-sodium chicken broth
    1 teaspoon brown sugar
    2 teaspoons apple cider vinegar
    tortillas, salsa, cheese and sour cream to pass at the table

Directions

Using a cooking spray, lightly coat a frying pan
Place pan over medium low heat
add chopped onions and sweat onions until translucent
Add all spices (chili powder, cumin, coriander, cayenne, oregano) and allow to cook for 30 seconds or until fragrant
Increase heat to medium and add turkey, combining with onion and spices and breaking it up with a wooden spoon
When turkey is no longer pink, add tomato sauce, vinegar, chicken stock and brown sugar to pan and stir to combine
Allow mixture to simmer until much of the liquid has thickened and been absorbed -- pan should not be dry (you want some liquid to keep the meat moist), but most of the liquid should be gone.
Use meat to build tacos using ingredients of your choice
