Introduction

This is a doctored version of traditional tomato sauce using canned and fresh ingredients. It is my personal preference for topping my favorite whole wheat pasta. Ingredients

    1 tbsp olive oil
    2 cloves garlic, minced
    1 medium onion
    1 small to medium green (bell) pepper
    1 can whole tomatoes
    1 can Hunt's Tomato Sauce (28 oz; recipe states no salt added; I use traditional; any variations from recipe may adjust nutritional information)
    1 can tomato paste (6 oz)
    1/4 tsp McCormick Perfect Pinch Itallian Seasoning
    5 leaves fresh basil

Directions

Mince garlic, finely chop onion, coarsley chop green pepper and set aside. Roll Basil leaves together and slice roll thinly; set aside.
Pour olive oil into medium sauce pan and heat over medium heat until hot. Add garlic and onion to oil; cook, stirring occasionally until onion and garlic have softened (about 5 minutes).
Add chopped green pepper and continue cooking for additional 5 minutes, stirring occasionally.
Add Hunt's canned tomato sauce and adjust heat to low.
Add tomato paste to sauce pan, stirring the paste in thoroughly.
Stir Itallian seaoning into mixture.
Allow sauce to simmer over low heat while following next step.
Scoop individual canned tomatoes out of can and place in small food processor or chopper. Chop tomatoes by using the lowest setting on the food processor or by using the pulse to coarsely chop. Discard juice remaining in can.
Add chopped tomatoes and basil to saucepan mixing well.
Simmer an additional 5 minutes stirring occasionally.

This recipe is fantastic over whole wheat pasta, or with pasta bakes, chicken parmasean, and many other dishes!
