Ingredients

    2 eggs, lightly beaten
    1 cup sugar
    1/2 cup canned pumpkin
    1/2 cup applesauce
    1-1/2 teaspoons vanilla extract
    1-1/2 cups whole wheat flour
    1/2 teaspoon baking soda
    1/4 teaspoon baking powder
    1/4 teaspoon salt
    1/4 teaspoon ground cinnamon
    1/2 teaspoon pumpkin pie spice
    1/2 cup shredded zucchini
    3/4 cup semi sweet chocolate chips

Directions

In a mixing bowl, combine eggs and sugar. Add pumpkin, applesauce and vanilla. Combine dry ingredients; gradually add to pumpkin mixture and mix well. Stir in zucchini and chocolate chips. Pour into 15 greased muffin tins. Bake at 350 degrees F for about 20 minutes or until test comes out clean.
