Number of Servings: 8

Ingredients

    2 lbs. fresh green beans, trimmed (~8 cups)
    3 T olive oil
    3/4 tsp. salt
    2 T white wine vinegar
    1-1/2 tsp. Dijon mustard
    1/2 tsp. sugar
    1/2 tsp. coarsly ground black pepper
    2 T chopped fresh dill

Directions

Preheat oven to 450 degrees. In a large roasting pan toss green beans, 1T olive oil, 1/2 tsp. salt, and pepper. Roast 20-30 mins, stir a couple of times, until al dente.

In a large bowl using a wire whisk mix vinegar, mustard, sugar, 1/4 tsp. salt, until blended. In a thin steady stream whisk in 2 T olive oil until blended. Stir in dill.

When beans are done, transfer to serving bowl, toss with vinaigrette until coated. Makes 8 servings.

    Incredible!
    I made this last night using frozen green beans instead of fresh. Fresh would have been better, but I just used what I already had on hand. I love vinegar and dill, so this is definitely a dish I'll make again! - 7/25/13
