    1 (about 1 lb) zucchini, cut into 1/4 inch slices
    3 tomatoes, thinly sliced
    1 onion, thinly sliced
    spices to taste (I like oregano, basil, and garlic powder)


Preheat oven to 350 degrees.
Boil zucchini until just beginning to be tender (about 5 minutes) and drain.
Spray a 9x13 with cooking spray.
Put a layer of tomatoes in the bottom of the pan
Layer zucchini and onions in pan, sprinkling with spices as you go.
Bake uncovered for about 45 minutes.

Also good topped with parmesan cheese (not included in calories and obviously not vegan). Goes well as a large helping of side dish with grilled chicken.
