Ingredients
* ox tails beef, 16 oz (probably about 3 pounds with bones)
* boston jerk seasoning, 5 serving (remove)
* crock pot
Directions
if ox tails are taller than 1 inch have butcher slice them in half along the horizontal.
Wash off meat with tap water
trim off as much of the fat on the outer ring of the ox tail
place larger pieces of oxtail on the bottom of the crock pot, squeeze small pieces in between the large pieces
place remaining pieces on top.
pour enough water to cover just bellow the top layer of pieces.
cook on lower for 3 hours or until tender depending on the pot and the thickness of the pieces.
After 2 hours stir pieces so all have soaked in the juices.
turn off pot, pour the liquid out of pot into a container, set in freezer
wait till fat rises to the top and solidifies
scrape fat off the juice, pour juice back in the pot
add jerk seasoning to taste.
set pot on low for 30 minutes before serving.
