Introduction

A chinese chicken stir fry I make often for my husband. A chinese chicken stir fry I make often for my husband.
Number of Servings: 3

Ingredients

    2 boneless skinless chicken breasts, cubed
    2 bell peppers (color doesn't matter), sliced
    2-3 onions, sliced
    .5c plus 1 tbsp olive oil
    3 tbsp soy sauce
    1 tbsp chinese five spice
    1 tsp green curry paste
    2 tbsp lemon juice

Directions

1) Mix together the .5c olive oil, soy sauce, lemon juice, five spice, and curry paste. Put together with the chicken in a large bowl or bag, and set aside to marinate.

2) Put remaining olive oil in a large hot skillet or wok over high heat and add the onions. Stir often. When the onions are just starting to brown, add the bell peppers, and cook for three minutes, stirring often. Add the chicken and marinade to the pan, and cook until the chicken is cooked through, and the vegetables are softened.

Serves 3.

(If you prefer your sauce a little thicker, you can also add in a tbsp of corn starch just before the chicken is finished cooking.)
