Ingredients

1/2 cup ASouthwestern Style Egg Beaters
1/4 cup drained canned spinach
2 oz mozzarella Cheese (grated)
2 Tbs Medium Salsa
Directions
Serving Size = 1 Omelet
Spray small skillet with Spray oil about 2-3 seconds to cover the bottom and heat.
Pour egg beaters in the skillet and cook slowly over a low heat.
When firm,
spread the spinach out on one side (spinach needs to be completely drained of juice or it will messy)
spread the grated cheese on top of the spinach
and fold over the egg on top of the stuffing.
Turn off heat and allow the egg and stuffing to heat through. Do not burn.
Serve the omelet wit salsa on top.
