Ingredients

1 Large Egg
3 Egg Whites
1/4 cup Athens Reduced Fat Fetta Cheese
15g (approx 3 halves) Via Roma Sundried tomatos
2 Cups Water
**Salt and Pepper to taste (Optional)
**Pam Cooking Spray
Directions
Bring 2 cups water to a boil in a small sauce pan. Once water is boiling add Sundried Tomatos to water, cover, and remove from heat. Allow Sundried Tomatos to soak in water for about 4-5 minutes. Once the Sundried Tomoatos have soaked, drain water, and slice the tomatos.
While Tomatos are soaking, crack 1 whole Egg, and 3 Egg Whites into bowl and mix well.
Lightly spray skillet with Pam Cooking Spay and add Egg mixture to the skillet... cook over medium heat.
Once the Eggs have stiffened, added crumbled Fetta Cheese and slices Sundried Tomatos.
Fold over one side of the Egg to make your omolette.
Salt and pepper to taste.
Serve and Enjoy
